Line 13” x 9” x 2” roasting pan with foil. Mix garlic, rosemary, salt, pepper in bowl until an aromatic paste is formed. Rub garlic mixture over pork. Place pork, fat side down, in prepared roasting pan; cook 30 minutes. Then turn roast fat side up; continue cooking until thermometer inserted into center of meat registers 155°, about 25 minutes. Remove from oven; let stand for 10 minutes. Drain juices from roasting pan into small saucepan; set over low heat to keep warm. Cut pork crosswise into 1/3 inch thick slices; arrange on platter.
