Apricots + yogurt = delicious smoothie! You can also leave out the ice cubes and serve like a mousse in a parfait glass – super tasty any way you have it
Ingredients
- 2 ½ – 3 cups Fresh organic apricot halves (1 pound fresh apricots = 2-1/2 to 3 cups sliced or halved)
- 1 cup organic low-fat organic plain or vanilla yogurt
- 1 teaspoon vanilla extract (or to taste)
- 6 – 8 ice cubes

Preparation
- Combine all ingredients in blender. Cover and blend on high until smooth. Add more ice cubes for a thicker smoothie. Serve and enjoy!
