Summer Gin Cocktail

This light cocktail is inspired by the herb garden. And the lavender simple syrup in this drink is irresistible and perfectly compliments the herbal notes from both the cucumber and the gin.
Ingredients
COCKTAIL
- 1 jigger (1 ½ oz.) gin (we love The Botanist)
- ½ oz. Martini Bianco
- ⅔ oz. lavender simple syrup
- ½ oz. fresh lemon juice
- 1 organic medium size cucumber, thinly sliced
- Healthy dash peach bitters
- Lots of ice
- Sparkling water
LAVENDER SIMPLE SYRUP
- 1 cup water
- 1 cup organic raw sugar
- 3 Tbsp. dried culinary lavender
*Choose organic whenever possible

Preparation
COCKTAIL
- Thinly slice cucumber and add to tall glass so that bottom of glass is full of cucumbers. Add gin, Martini Bianco, lavender syrup, lemon juice and peach bitters. Fill glass with ice cubes and top with sparkling water until the glass is full.
LAVENDER SIMPLE SYRUP
- In a medium saucepan combine sugar and water. Bring to a boil, stirring, until sugar has dissolved.
- Allow the mixture to cool then add the lavender. Refrigerate overnight then strain out lavender buds. Store in fridge.
Tip
Garnish with a sprig of lavender.
